Enchiladas are supposed to be relatively easy, right?
At least, I thought they were. You roll up some tortillas with goodies inside and add taco sauce and cheese.
Yeah, no.
So this was a case where I didn’t properly research how to make enchiladas before I tried to do it. We ended up with MUSH. Serious MUSH.
The flavors were phenomenal, but the enchiladas themselves were nearly edible. We ended up picking out the chicken and leaving the rest!
I did a little research after the fact, however, and discovered when making traditional enchiladas with corn tortillas, you should fry the tortillas first to crisp them up a little.
Apparently, you are also supposed to dip the tortillas in taco/enchilada sauce before filling and rolling. Well, I didn’t do that. I laid the tortilla out on a plate and put the taco sauce on like you would spread pizza sauce on pizza dough.
Then, I made the really big mistake. I poured taco sauce all over the top of the enchiladas and put a TON of cheese all over it. And when I say all over, I really mean all over.
We basically ended up with a very flavorful soggy mess on our plates with bits of very tasty chicken hidden inside.
Now that I have done my proper research, I shall try again. Perhaps you will find a chicken enchilada recipe on the blog someday! Until then, it is just another food fail from my kitchen.
Even a spork couldn’t save it!
